Well, I've never heard of the Zampieron book myself. But when it comes to fighting fungus/candida your best bet is to cut all sugar for as long as you can as this is what fungus feeds on.
Yes, the apple fast is a good way to clean out your gut but you will not be OK to go straight back on sugar aftewards. Candida is very hard to get rid off so you will have to persist with the limit on sugar for many months. My hubby Jon stayed off it for 6 months to get rid of his Candida. Even now (1 year later) he only has fruit - virtually no white sugar in his diet at all.
Raw garlic is pretty powerful and I know some people use oregano oil capsules also. Coconut also has anti-fungal properties. Home remedies will help to a point but really cutting the sugar is the key. Coconut would be good to have while you're off fruit as it's full of fibre and will help keep things moving.
Jon has experimented with Probiotics (Natren's Healthy Trinity) for months but noticed no change so ditched them as they were extremely expensive anyway. Many brands can be starchy so if you're going to take that route just be careful.
I know certain foods encourage the growth of good bacteria (which are already naturally present in our gut) so for me personally I am not convinced that we need to take Probiotics in pill/capsule form. Others may disagree or perhaps they will have some suggestions for you, like homemade kefir etc which may be worth a try.
