I think you just drink some vinegar, a tablespoon (people put it in juice or water to make it less strong on the taste buds and stomach), but for some reason the idea is to totally cut out sugars. I wonder: Is this an improvement on the NSD?

I'm doing No Starch, and until I ate a piece of toast with butter and peanut butter I didn't realise what a difference it has made to my stiff hip/lower back area. That toast really could be the reason why the following day I ached really bad. I have not cut sugar or dairy as I'm simply impressed with the HLAB-27 argument and cant see why dairy would make any difference.
