Just a little tiny wheeny take with a grain of salt warning:
I could not tolerate cabbage/sauerkruat... I did not realize it until four months into the diet- I was just in constant, unbareable pain...(I switched from starch pain to cabbage pain) I did not realize that it was that new food that was triggering me, as EVERyONE eats it and it is soooooo good for gut health. I just kept pounding it. I did not realize what it was that was nailing me to the wall, until I did a total elimination diet. Then it was VERY clear. My daily pain dropped 2-3 points.

My point is not that you may be fine with cabbage, but anyone should realize that foods that bother you may not cause other people problems and vice versa. For example, I do amazing with avocados, but lots of people seem not to tolerate them. We are our own guinne pigs.... unfortunately.

Good luck!

thank you light, that's important info to 'digest' (sorry, couldn't resist!). i don't normally eat cabbage so i will be on the lookout for new, unknown triggers with it and any other 'new to my system' l/nsd items.

Hi All,

I'll start to make it this weekend, but i choose to make kimchi first than sauerkraut. But it the same anyway because the main vegetables is cabbage. The difference is in the spice and other ingredients is used.

I want to ask is it okay to ferment the vegetables in a tupperware jar (plastic jar)? Or there is a must to make it in a crock (clay or glass)?

And is there any substitute vegetables to replace cabbage?

I think the author of Wild Fermentation describes using a large 5 gallon plastic bucket to make large batches. Its your preference. I prefer not to use plastic, I've heard the plastic toxins leach into whatever you put into it.

I think you can use any vegetable as long as they are not starchy. Spices are starchy. Use herbs to add flavor. You can use cucumbers using this same method of fermentation, add garlic and herbs if you like.

Hi Bridgespan / Jeanne

I bought Eden sauerkraut but it tested black with iodine. I was wondering if it is still ok to eat as it is so much easier to digest.

Everything is flaring me at the moment so I am very uncertain. All I ate last week was fish, salad and oils. I am introducing eggs but it is so hard to know if the pain is mechanical or inflammation due to food...it is very frustrating.

Anybody got any ideas...I lost another kilo last week and people at work are now asking questions about my health.

Sauerkraut yay or nay!!!

It is my impression that you should not eat anything that tests black with iodine, regardless of how healthy it may be for everyone else.... after you get your pain down to zero and spend some time healing, some people can tolerate some starch, sometimes....

but if you are still actively flaring, eating any starch will undue all the sacrifices you are making.

I think the one and only exception I have heard of is in the case of ginger- some people find it very soothing- the fact that it is antifungal helps (it can kill the buggers, even though they eat it, as it is a starch). Though some people seem to still react badly to it, so I am too much of a scared e. cat to try.

On a similar note, it comes up from time to time that we should not have echinacea, something that is incredibly good for most people, but is BAD, BAD, BAD for people with any immune disorders: It revs up our already hyper immune systems.

It is a tricky, tricky business.

Stacey

Good luck.
