Hi Everyone,
I'm interested in fermenting my own kimchi, but I'm concerned about the chili powder (Korean or otherwise) as being a problem on NSD. Anyone have experience with this?
Husband diagnosed with AS in '92. Enbrel appx 2011- March 2013 when ER doctor temporarily terminated. Grateful to have finally found Kickas in April 2013 and NSD since May 2013. Since NSD no need to resume Enbrel. Enbrel only helped hip pain, did not touch chest pain. Since NSD, both hip and chest pain have improved. Still takes pain and other pills daily, but far fewer.

Hi Mary,
Can you just omit the chili powder and use hot peppers instead? Or no peppers if you are sensitive to them? The cabbage, onion, garlic, ginger, etc should still give you a great flavor.
My GI tract is super sensitive to chili powder these days, and I do okay with hot peppers, if eaten sparingly. (I used to LOVE hot sauce, but now it doesn't love me back so much)
I ferment my own sauerkraut, similar process to kimchi, and don't believe heat like hot pepper is needed, just added for flavor. At least that is my understanding. I have friends that ferment all sorts of stuff, and they are always mixing it up with wild combinations.
I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. I use chili powder in lots of dishes, and I haven't noticed any adverse effects concerning NSD.

AS symptoms started 1991. Official dx in 2006 with HLA-B27+, fused SIJ, bone spurs in back, extreme rib/hip pain, and other family with SpA. Started Enbrel in 2006 with good results, but stopped in 2010 due to nerve damage (MS) from it. Getting good results with no-starch diet since 2011.

Hi betty, I have read that sauerkraut is not helpful in fighting Candida, so if those with AS are likely to have candida, would that be a good thing to eat? I make raw kraut too, but am rethinking its benefits for my hubby who has AS, and probably candida too. Apparently some with AS can't do cabbage at all. Since reactions to foods can come days after a food is eaten, it's tough to figure out what he's reacting to. He's going to do a colon cleanse on water this next week, and add back one food at a time, so hopefully we'll find some answers.
