Can anyone give me feedback on if/how tolerate bamboo shoots?, or are they starchy? Also, is it correct that baby corn and water chestnuts are starchy?? Iodine tested?

I found baby corn (under sweet corn) on the list, and also learned water chestnuts are starchy, but still don't see bamboo shoots~

Here in Oz, baby corn tests OK with iodine - both tinned and fresh (raw and cooked - lightly steamed/stir-fried...) But water chestnuts turn black as quick as lightning!  Don't like the taste of bamboo shoots, so don't know...

Bamboo shoot turn iodine into black in Taiwan and Japan. I miss them very much. They are very tasty.
